Aceto Balsamico Tradizionale
The Italian name for Traditional Balsamic Vinegar, a product carrying the highest DOP certification. It is made exclusively from mosto cotto (cooked grape must) and aged for a minimum of 12 years, and sometimes 25 or more, in a series of wooden barrels. When you see this phrase on a label, you're looking at balsamic vinegar produced under strict regulations in Modena or Reggio Emilia.
Acidity (Titratable Acidity)
A measurable quality benchmark for both olive oil and balsamic vinegar. For extra virgin olive oil, free fatty acid levels must stay at or below 0.8%, while Balsamic Vinegar of Modena IGP must reach at least 6% acidity. Checking acidity levels is one of the most reliable ways to verify the grade and authenticity of these products.
Aged Dark Balsamic Vinegar
A balsamic vinegar made from cooked grape must and matured over time in wooden barrels, developing deep color and concentrated, complex flavor. This is the traditional style of balsamic, as opposed to white balsamic, and the extended aging process yields layers of sweetness, tartness, and richness. It's a cornerstone of our condiment collection.
All-Natural
A labeling term indicating that a product is made without synthetic additives, artificial colors, or lab-created ingredients. Artisan / Artisanal
A descriptor for food products made by hand in small quantities, with careful attention to ingredients and technique. Artisan production prioritizes quality, flavor, and craftsmanship over speed and volume. In gourmet condiments, the term distinguishes handcrafted goods from mass-produced alternatives.
Balsamic BBQ Sauce
A gourmet condiment that blends the sweet-tart complexity of balsamic vinegar with the smoky, savory character of traditional barbecue sauce. The balsamic component adds depth and a caramelized finish that pairs especially well with grilled meats and roasted vegetables. It's a favorite among grill masters looking for bold, layered flavor.
Balsamic Vinegar of Modena
A legally protected product designation (PGI/IGP) under European Union regulations, requiring that the vinegar be produced in the Modena or Reggio Emilia region of Italy using approved grape varieties. This geographic certification guarantees a baseline of authenticity and regional character. Our balsamic vinegars are sourced directly from Modena.
Barrel-Aged
A production method in which vinegar, honey, or other liquids are matured inside wooden barrels, allowing the product to absorb flavor compounds from the wood over time. Different barrel woods, such as oak, cherry, chestnut, or juniper, contribute distinct aromatic qualities. Barrel aging is a hallmark of premium artisan vinegars and honey vinegars.
Batteria
The traditional set of five to seven progressively smaller wooden barrels used to age Traditional Balsamic Vinegar. Each barrel in the series is made from a different type of wood, and the vinegar is transferred from larger to smaller barrels over years or decades, concentrating flavor at each stage. The batteria system is central to the character of authentic aged balsamic.
Chiltepin
A tiny, wild chile pepper native to the Sonoran Desert of southern Arizona and northern Mexico. Chiltepins deliver a sharp, intense heat that fades quickly, and they are a defining ingredient in Sonoran-style salsas and hot sauces. Their wild-harvested nature and regional significance make them a symbol of Southwest culinary heritage.
Cold-Pressed
An extraction method for olive oil in which olives are crushed and pressed at temperatures no higher than 27°C (about 81°F), without the use of chemicals or excessive heat. This low-temperature process preserves the oil's natural polyphenols, aromas, and flavor nuances. Cold-pressed is a standard quality indicator for artisan extra virgin olive oils.
DOP (Denominazione di Origine Protetta)
The Italian acronym for Protected Designation of Origin, the most rigorous certification for Traditional Balsamic Vinegar. A DOP designation requires that the product be made entirely from cooked grape must and aged for at least 12 years within the provinces of Modena or Reggio Emilia. It is the gold standard of balsamic authenticity.
Dry Rub
A blend of dried spices, herbs, and seasonings applied directly to meat, poultry, or vegetables before grilling, smoking, or roasting. Unlike wet marinades, dry rubs form a flavorful crust on the surface during cooking. Our artisan rubs and seasonings are crafted to complement the bold flavors of Southwest-inspired grilling.
Extra Virgin Olive Oil (EVOO)
The highest grade of olive oil as defined by USDA and International Olive Council standards, with free fatty acidity at or below 0.8% and zero sensory defects. EVOO is extracted mechanically from fresh olives without heat or chemical processing, preserving its full range of flavor and nutritional benefits. It is the foundation of our olive oil collection.
Finishing Oil
A high-quality extra virgin olive oil used as a final drizzle over a completed dish rather than as a cooking fat. Applying EVOO after cooking preserves its delicate aromas, peppery notes, and polyphenol content. Single-varietal and flavored olive oils are especially prized as finishing oils because their distinct character shines when unheated.
Fire-Roasted
A preparation technique in which chiles, tomatoes, or other vegetables are charred over an open flame before being incorporated into salsas, sauces, or condiments. The direct flame contact creates smoky, caramelized flavors and a depth that oven roasting alone cannot replicate. Fire-roasting is a signature method in Southwest cooking.
Flavored Olive Oil
An extra virgin olive oil that has been infused with herbs, citrus, chiles, or other natural ingredients to create a distinct flavor profile. These oils are a separate category from plain EVOO and are popular for finishing dishes, dipping bread, or adding a quick burst of flavor to everyday cooking. Honey Vinegar

Mosto Cotto (Cooked Grape Must)
Freshly pressed grape juice that has been slowly simmered until it reduces by 50% to 70%, concentrating its natural sugars and developing a rich, caramelized sweetness. Mosto cotto is the essential starting ingredient for authentic balsamic vinegar. The quality of the grapes and the care taken during cooking directly shape the final vinegar's flavor.
Polyphenols
Naturally occurring antioxidant compounds found in extra virgin olive oil that contribute to its characteristic peppery bite and slight bitterness. Higher polyphenol content is associated with both superior flavor complexity and greater health benefits. Artisan, cold-pressed EVOOs typically retain more polyphenols than mass-produced oils.
Single-Varietal Olive Oil
An olive oil pressed from a single cultivar of olive, such as Arbequina, Koroneiki, or Picual, rather than a blend of multiple varieties. Each cultivar produces oil with a distinct flavor profile, ranging from grassy and herbaceous to buttery and mild. Single-varietal bottling lets you taste the unique personality of one olive variety.
Small-Batch Production
A manufacturing approach in which products are made in limited quantities, allowing the maker to maintain hands-on oversight at every stage. In artisan food, small-batch production signals a focus on quality, consistency, and careful ingredient selection over industrial-scale efficiency.
