We still work in small batches, the way it has always been done here. The grape must rests in a succession of oak barrels, each one older than the last, drawing out depth and sweetness slowly — never rushed, never forced. It is a process measured in years, not weeks, and it is the only way we know to make vinegar that tastes like the place it comes from.
